Interesting History Of Croissants | Vegan Croissants Recipe

Are Croissants French?

If you are a Croissant lover and wonder whether the history of ‘Croissants’ is in France, your search ends here! The era dates to the 1683 Battle of Vienna which portrays Croissant history. Vienna was under siege, surrounded by thousands of Ottoman soldiers for two months. Messengers were sent to neighbouring countries for help and came with no good news. The worn-out Viennese army would have surrendered until a messenger came up with good news. The king of Poland was on the way with his armed forces. 

On the other hand, the Ottoman army was outlining a new plan to break through the thick protective walls of Vienna by digging tunnels under, filling the trenches with gunpowder, and blowing the walls in chunks. Ottomans were shoveling away in the very early morning hours when people were asleep; the city bakers heard strange noises under their feet as they were kneading their dough to prepare bakery desserts.

The croissant history says that bakers hurried to contact the authorities who dig their own tunnels and intercept the gunpowder. Poland’s army appeared on the horizon and battled the Ottomans who fled the scene. The battle was won by Vienna.

To immortalize the victory and celebrate their contribution to saving their city, the bakers prepared a crescent moon-shaped special pastry and named their creation Kipferl.

By the 19th century, the Kipferl took its place in France but it was far from the flaky pastry we enjoy today. It was the Austrian version, made of heavy dough. Two Austrians opened a Viennese bakery (1837) in Paris and by mid-century Kipferl became a popular bread in France and was termed ‘Croissant’ (French word for crescent). By the end of the 19th century, the Croissant bread took the now familiar flaky form, becoming a symbol of France.

Vegan Croissant Recipe

Vegan Croissant Ingredients

Ingredients

  • Bread Flour
  • Vegan Butter
  • Active Dry Yeast
  • Finely Grind Rock Sugar
  • Salt & Water
  • Vegan Oat-Cream/ Soy Milk

Instructions

1. Prepare a dough by mixing bread flour, salt, sugar, yeast & water until it gets smooth and lumps-free.

2. Transfer it to an oiled bowl and let it rise on the counter until at least doubled in size. This usually takes 1-2 hours.

3. Once the dough rises, punch it down in a rectangle form. Keep it in a refrigerator overnight.

4. On the other hand, cut the butter into slices and wrap it with baking paper. Flatten the butter (6”*6”) and chill it overnight.

5. Enchase the butter slab into the dough. Roll the dough out to make it larger than twice the length of the slab.

6. Fold it over & pinch the edges to seal thoroughly. Then fold the edges into the center and then once more double turn.

7. Divide the dough and work with one dough at one time. Roll one half out to 18”*9” and cut it into triangles.

8. Roll every triangle to get the crescent shape and brush them with soy milk. Keep it to rest for 1 hour.

9. Brush the croissants with vegan oat cream or maple syrup instead of egg wash.

10. Bake the croissant at 200°C (390°C) for approximately 15 mins.

11. Delicious vegan croissants toast is ready.
