With coconut flour’s natural mild sweetness and fiber richness, these St. Patty’s Day breakfast pancakes are absolutely amazing. Kids can pick their favorite toppings, creating a fun-filled and delicious experience they’ll love!
1 tablespoon honey, maple syrup, or coconut sugar (adjust to taste)
Butter, for frying
Steps to follow:
1. Blend the spinach mixture: In a blender, combine spinach, banana, eggs, vanilla extract, and milk. Blend until smooth.
2. Add the dry ingredients: In a bowl, whisk together coconut flour, arrowroot starch, Himalayan pink salt, cinnamon powder, and your chosen sweetener.
3. Combine wet and dry ingredients: Pour the blended spinach mixture into the dry ingredients and stir well to form a thick batter. Let it sit for 5 minutes to allow the coconut flour to absorb moisture. Adjust with a little more milk to reach your preferred consistency.
