World Emoji Day | Vegan Coconut Macaroon Recipe

In the world of digital and online communication, Emojis perfectly accompany alphabets in order to convey emotions, expressions, and ideas in a more visual and concise way. With time, Emojis have become an integral part of online communication and are widely used and recognized across different cultures and languages. To embrace this creativity, World Emoji Day is celebrated on July 17th each year.

World Emoji Day was first established by Jeremy Burge, the founder of Emojipedia, in 2014. The purpose of this day is to celebrate the use and impact of emojis in modern communication. The Day is observed through various activities and events. People often share their favorite emojis, emoji stuff, and emoji toys on social media platforms using the hashtag #WorldEmojiDay. So, why not add extra delight to this Emoji Day celebration by cooking the perfect Vegan Smiley Coconut Macaroon Recipe? Check the super-simple dessert recipe.

Vegan Smiley Coconut Macaroon Recipe

Ingredients

  • 1 cup shredded coconut
  • 1/2 cup Pride of India Coconut Flour
  • 1/2 cup Pride of India Three Color Quinoa (cooked & cooled)
  • 1/2 cup coconut cream
  • 1/4 cup Pride of India Coconut Sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of Pride of India Himalayan Pink Salt
  • Vegan chocolate chips or mini chocolate chips for smiley face decorations (optional)
  • Edible markers or icing for drawing emojis

Instructions

  • Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, combine the shredded coconut, coconut flour, cooked quinoa, coconut cream, coconut sugar, vanilla extract, and pink salt. Mix well until all the ingredients are thoroughly combined.
  • Take small portions of the mixture and shape them into round macaroons using your hands. Place them on the prepared baking sheet, leaving some space between each macaroon.
  • Bake the macaroon cookies in the preheated oven for about 15-20 minutes or until they turn golden brown on the edges.
  • Once the macaroons are baked, remove them from the oven and let them cool completely on the baking sheet.
  • Once the macaroons are cooled, you can decorate them with emojis. Use edible markers or icing to draw your favorite emojis on the macaroons. Get creative and make each macaroon a different emoji!
  • If desired, melt some vegan chocolate chips or chocolate chip cookies and drizzle it over the macaroons for added flavor and decoration.
  • Allow the chocolate to set, and then your emoji vegan macaroon cookies using coconut flour and quinoa are ready to be enjoyed!

These coconut macarons with emojis are a delightful twist on the traditional recipe. They offer a unique texture and added nutritional value. Enjoy these healthy desserts, or pack them with a coconut cookies gift; let the emojis bring a smile to your face!
