Simple Directions
For the Bundt Cake:
Preheat & Prep: Preheat the oven to 350°F (175°C). Grease your Bundt pan with oil and lightly dust with cocoa powder.
Mix Dry Ingredients: In a large bowl, whisk together chickpea flour, coconut sugar, baking powder, baking soda, cinnamon, cardamom, ginger, cocoa powder, and salt.
Mix Wet Ingredients: In another bowl, combine coconut oil, applesauce, warm milk, vanilla extract, and lemon zest. Mix well.
Combine & Fold: Gradually add the chickpea flour mixture to the wet mixture, whisking until smooth. Fold in optional add-ins like chopped nuts or chocolate chips.
Pour & Bake: Pour the batter into the prepared Bundt pan,smoothing the top. Bake for 40-45 minutes. Insert a toothpick into the center of the cake, and if it comes out clean with just a few crumbs stuck to it, the cake is ready!
