QUINOA ENCHILADA BAKE

 

Our Red Royal Quinoa is one of the healthiest ingredients one can use to make something healthy and delicious. Top it with the added goodness of corn and this cheesy enchilada bake recipe is ready to satisfy your cravings! 

WHAT YOU NEED 

    HOW TO MAKE 

    • Boil the red quinoa and keep it aside. 

    • Preheat oven to 350°F

    • For the enchilada sauce, take a medium saucepan and heat the oil. 

    • Cook the onions until golden brown. 

    • Add all the spices and tomato sauce to it. Stir well and simmer sauce for 10-12 mins. 

    • Take a large bowl and add tomatoes, corn, cooked quinoa, and cilantro in it.  

    • Add the enchilada sauce with this mixture with shredded cheese. 

    • Pour into the oven safe casserole dish with the sprinkled cheese on top and bake for 15-20 mins. 

    • The enchilada bake is ready!
