1.5 cups Pride of India Pre-seasoned White Basmati Rice (w/ Minced Onion & Garlic)
2 tbsp Pride of India BBQ Spice Rub
1/2 cup Tomato puree
2.5 cups Water (or broth)

The Marination: Toss chicken pieces with 1.5 tbsp of the BBQ Rub. Let it marinate for 1 hour. This allows the ginger and pink salt in the rub to penetrate and tenderize the meat.
The Sear: Heat oil in a large pot over medium-high heat. Brown the chicken on all sides. It doesn’t need to be cooked through yet, just get a nice crust.Remove the chicken and set aside.
The Aromatics: In the same pot, add the 1/2 cup tomato puree. Stir for 2 minutes to cook out the raw acidity. Add the Basmati Rice with pre-mixed onion & garlic and the remaining 1/2 tbsp BBQ Rub. Stir to coat the grains in the tomato-spice base.
The Liquid: Pour in the water and add someHimalayan Pink Salt. Bring to a rolling boil.
The Simmer (Adjusted Timing): Place the browned chicken back on top of the rice. Cover with a tight-fitting lid andreduce heat to low. Cookfor 20-30 minutes
The Rest: Turn off the heat. Let the pot sit,covered, for 5–10 minutes. This carries the steam through the center of the grains. Remove the lid, fluff gently with a fork to mix the tomato layer with the white rice, and top with a generous handful offresh cilantro.
